Ingredients:
-
1 cup mixed dry fruits (almonds, cashews, pistachios, etc.), chopped or crushed https://www.kindlife.in/healthier-than-junk-trail-mix-200gm/
-
1 cup granulated sugar https://www.kindlife.in/organic-raw-sugar-500g/
-
1 tablespoon ghee (clarified butter) https://www.kindlife.in/a2-cultured-ghee-desi-gir-cow-1-ltr/
-
2-3 tablespoons water
Instructions:
-
Grease a plate or tray and keep it aside. This will be used to spread and set the chikki.
-
Heat a pan or a skillet over medium heat and add the chopped mixed dry fruits. Dry roast them for a couple of minutes until they turn slightly golden and aromatic. Once done, transfer them to a plate.
-
In the same pan, add ghee and granulated sugar. Stir the sugar continuously over medium heat until it melts completely. This will take a few minutes.
-
Once the sugar melts, add 2-3 tablespoons of water to the melted sugar and ghee mixture. Be cautious as it may splutter a bit. Mix well and let it cook for a minute or two until the mixture thickens slightly.
-
Now, add the roasted dry fruits into the sugar syrup and mix them thoroughly until the dry fruits are well coated with the syrup.
-
Quickly transfer this mixture onto the greased plate or tray. Spread it evenly using a greased spatula or the back of a spoon. Press it down gently to make a uniform layer.
-
Allow the mixture to cool for a few minutes. While it's still warm (but not hot), use a knife to cut it into desired shapes or squares before it completely hardens.
-
Let the Dry Fruit Chikki cool completely and set for about 20-30 minutes before breaking them along the scored lines.
This Dry Fruit Chikki is a delightful, crunchy treat loaded with the goodness of assorted dry fruits and makes for a perfect sweet snack during Lohri or any festive occasion!
