Ingredients:

4 cups grated carrots

2 cups skimmed milk

Instructions:

Heat ghee or oil in a pan, add grated carrots, and sauté on low-medium heat for 8-10 minutes until the raw smell disappears.

Pour in the milk and cook the carrots on medium heat until the milk evaporates, stirring occasionally. This might take around 20-25 minutes.

Once the milk is reduced, add the sweetener, and cardamom powder, and mix well. Let it cook for another 5-10 minutes.

If using nuts, lightly roast them in a separate pan and add them to the halwa.

Optionally, add saffron strands for flavor and color.

Once the mixture thickens and reaches a halwa consistency, could you remove it from the heat?

Serve warm, garnished with additional nuts if desired.
