1 small onion, finely chopped

1 small tomato, finely chopped

2 tablespoons chopped coriander leaves

Tamarind chutney and green chutney (store-bought or homemade)

Instructions:

Heat oil in a pan over medium heat. Add the makhana and roast them until they become crispy. This might take about 4-5 minutes. Remove them from heat and let them cool.

In the same pan, roast the peanuts until they turn golden and crispy. Remove and set aside.

Using the same pan, roast the cashews and almonds until they are lightly golden. Remove and set aside.

Once cooled, transfer the roasted makhana to a mixing bowl. Add the roasted peanuts, cashews, almonds, raisins, chaat masala, red chili powder, roasted cumin powder, and salt. Toss well to coat all ingredients evenly with the spices.

In a separate bowl, mix the chopped onion, tomato, green chili (if using), and coriander leaves. Set this mixture aside.

Take a serving plate or bowl. Spread a layer of the spiced makhana, peanuts, and nuts mixture on the plate.

Spoon the onion-tomato mixture over the makhana and nuts.

Drizzle tamarind chutney and green chutney over the mixture.
