Shakarkandi Samak Tikki (Sweet Potato and Samak patties) for all of you fasting for the Navratri.
Sweet potato is so versatile! Choose sweet potato over the regular white potato for more fiber and lower GI which means better blood sugar control. Thatβs why it is a great choice for fasting - it keeps you full for longer.
The recipe is gluten free. I have used cooked and cooled Barnyard Millet / Samo / Moraiyo / Vrat ke chawal for the binding and to give these a good bite.
Recipe:
1 cup cooked Samak / Barnyard Millet
1 cup boiled shredded sweet potato
1 tsp amchur (dry mango) powder
1 tsp cumin powder
1 tbsp chopped coriander
1 green chilli chopped
1 tbsp roasted broken cashew
1 tsp roasted white sesame
Salt to taste
Mix them all and shape into a ball or tikki. Can be baked in the oven at 200 degrees celsius after smearing with some oil or in the paniyaram pan with minimal oil. Serve with chutney of choice.
