Romaine Walnut Avocado Salad
This is a great recipe for those times when you have only five or ten minutes to prep, eat, and get back to your day.
Makes 2 servings
2 tablespoons extra virgin olive oil
1 tablespoon vinegar
1/2 sliced red pepper
1/2 cup boiled chicken or tofu
4 cups chopped romaine lettuce
1 avocado, diced
1/4 cup dry-roasted walnuts
1/4 cup goat cheese
2 tsps sesame seeds
In a large bowl, whisk the olive oil and vinegar oil until smooth. Add the romaine avocado, and walnuts and toss to coat. Finish with cheese and a pinch of Maldon salt.
