Pineapple Pico de Gallo


 

While nothing really beats a simple cucumber sliced with some lemon juice at mealtimes. Sometimes, we just want to jazz things up a little and the ????????? ???? ?? ????? is just that! 

 

The fibre from the water-rich ingredients helps one stay full and I could add some fresh greens to the leftovers (usually aren’t any!) to double it up as a salad at the next meal. 

 

The secret to good Pico de Gallo is how finely chopped your ingredients are. It’s Salsa Fresca but not as runny as that. Traditionally made with tomatoes, I’ve swapped them for some fresh pineapple. Incredibly simple recipe. Here goes!

 

Serves 4

Chopped bell pepper - 1/2 cup 

Chopped pineapple - 1/2 cup 

Chopped white / red onion - 1-2 cup 

Chopped cucumber - 1 cup 

Fresh basil / mint leaves - 2-3 torn 

Cumin powder - 1 tsp 

Salt to taste 

Half a lemon squeezed

A tbsp of sunflower seeds for crunch 

 

Toss and serve immediately with chips or crackers of choice.
