Peanut butter banana protein pancakes

1 banana, mashed

1/2 cup Greek yogurt

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/2 cup milk (dairy or plant-based)

1/4 cup unsweetened applesauce or 1/4 cup mashed avocado

1 teaspoon vanilla extract

Pinch of salt
Recipe
1. In a mixing bowl, combine the mashed banana, applesauce or mashed avocado, and peanut butter.
2. Add the rolled oats, baking powder, vanilla extract (if using), protein powder, and a pinch of salt. Stir until all ingredients are fully combined into a pancake batter consistency.
3. Heat a non-stick skillet or griddle over medium heat and lightly grease it with cooking oil or vegan butter.
4. Pour a scoop of the pancake batter onto the skillet to form pancakes of your desired size.
5. Cook the pancakes for 2-3 minutes on one side, or until bubbles start to form on the surface. Flip the pancakes carefully and cook for another 1-2 minutes on the other side.
6. Once cooked, transfer the pancakes to a plate. Serve your peanut butter banana protein pancakes warm, topped with additional sliced bananas, a drizzle of peanut butter, a sprinkle of chopped nuts, or a touch of maple syrup if desired.
